After a long Fourth of July weekend, all I wanted was a light, healthy meal. Meatballs are the perfect go-to because I can eat them “as is”, while my boyfriend likes top off a plate full of pasta. To make them lean and clean, I decided to use turkey and fresh herbs (I’ve made a beef and cheese version here). Also, instead of bread crumbs, I threw in some cauliflower rice which kept them moist as well as carb-free. This is a great, quick meal to whip up any day of the week. Since it feels like a comfort food, it will satisfy everybody no matter their eating habits. Oh, and I can’t wait to take the leftovers to work tomorrow for lunch! 

Cauliflower Turkey Meatballs

Ingredients
  1. 1 1/4 pounds ground turkey, 90/10
  2. 1 small head of cauliflower
  3. 1 egg
  4. 2 tablespoon + 1 teaspoon crushed chili flakes
  5. 1 cup parsley, minced + plus more for garnish
  6. 1 tablespoon minced sage
  7. 1 can diced tomatoes
  8. 1 can crushed tomatoes
  9. 2 cloves of garlic, minced
  10. 1 tablespoon olive or grapeseed oil
  11. Salt and pepper, to taste
Instructions
  1. Preheat the oven to 350ΒΊF.
  2. In a food processor, mince the cauliflower.
  3. Add one cup of cauliflower rice to a large bowl and mix with the ground turkey, egg, parsley, sage, one tablespoon crushed chili flakes, one clove minced garlic, salt and pepper.
  4. Roll mixture into golf-sized meatballs and place on a lined baking sheet (you may need two).
  5. Bake meatballs for 15 minutes.
  6. While the meatballs are cooking, start your sauce.
  7. In a large pan, heat a touch of olive or grapeseed oil, one teaspoon chili flakes and one clove minced garlic.
  8. Add both cans of tomato, salt and pepper to taste, and bring to a boil. Add remaining cauliflower rice (this will cause your sauce to be a little thinner, so if you want to keep it thick, you can omit this step.)
  9. Once the meatballs are done, toss into the sauce and cook for another 10 minutes.
  10. Garnish with extra parsley and serve by itself or over pasta!
Notes
  1. You can also use chicken for this recipe if you prefer.
