it’s a meatball…

As I continue my attempt at eating low carb, I’m coming to realize that low carb doesn’t mean depriving yourself. One of the biggest obstacles of eating low carb is simply what food you have available. It takes some planning, but you can have delicious and satisfying meals like meatballs!! These are juicy, cheesy, saucy – and made with cauliflower! Mind blown.

you will need: (makes about 6 large meatballs)

for the meatballs:

1-1 1/5 lbs. Ground Beef. (I used grassfed, 80% lean)

1/2 Head of Cauliflower.

2 Cloves Garlic.

3 tbsp. Fresh Parsley.

2 Eggs.

1/2 cup Mozzarella Cheese.

1/2 cup Parmesan Cheese.

Salt.

Pepper.

for the sauce:

1 28oz can Crushed Tomatoes.

2 Cloves Garlic.

1 tbsp. Olive Oil.

3 tbsp. Fresh Parsley.

3 tbsp. Fresh Basil.

Salt.

Pepper.

Food Processor.

Preheat the oven to 400 degrees.

Process the cauliflower so it is the consistency of bread crumbs and yields about half a cup.

Chop the garlic up into tiny pieces.

Add the ground beef, garlic, cauliflower, egg, parsley, cheese, and a pinch of salt and pepper to a bowl.

Using your hand, mix everything together. Be careful not to over do it.

Shape the meatballs with your hand and place on a greased or lined baking sheet.

Cook for 30 minutes.

While the meatballs are cooking, start making the sauce.

In a large pot, heat the olive oil and shimmer the garlic on the stove until it is slightly translucent.

Add the crushed tomatoes, salt, and pepper and bring to a boil.

Reduce heat medium-low, stirring occasionally, and add parsley.

When the meatballs are done, add them to the sauce, cover, and cook for 30 minutes.

Stir in basil and serve!
