These tasty little Potato & Broccoli Bites are just perfect for a St. Patrick’s Day snack! They are super easy to make (just need a bit of patience while the potatoes cook and cool down) and use only a few ingredients, but the best part is that they are super adaptable to your preferences or diet. As I’ve mentioned before, M and I try to properly food combine all our meals during the week. The weekend is a little more of a free for all, so I created two versions here – weekday and weekend versions if you will. One is with just potato and broccoli and one is topped of with melted cheddar and crispy bacon! Either way, these little guys are oh so good! I actually want to make them again tonight!

Potato & Broccoli Bites
  1. 10 medium sized red potatoes, washed clean
  2. 1/2 crown of broccoli, cut into florets
  3. 2 Tbsp. butter
  4. Olive oil
  5. Salt & pepper, to taste
  6. Optional: 2-3 slices of crispy bacon, cut into small pieces
  7. Grated cheddar cheese
  1. Preheat the oven to 375ΒΊF.
  2. Rub each potato with olive oil and bake for 40-45 minutes, until potatoes are tender and easily pierced with a fork.
  3. While the potatoes are baking, bring a pot of salted water to a boil. Add broccoli florets and cover. Cook for about 3-4 minutes, until broccoli is tender and bright green.
  4. Add broccoli to a blender with 1-2 ladles of the broccoli water and one tablespoon of butter. Blend until smooth and creamy
  5. Let the potatoes cool down enough until you can handle them easily.
  6. Cut each one in half and scoop out the inside. Make sure to leave some in though, let's say 1/4 of an inch.
  7. Melt remaining butter.
  8. Butter and salt each potato, fill with broccoli puree (also cheese and bacon if you want) and put back in the oven for 5-10 minutes, or until the potato has browned up a bit.
  9. Salt and pepper to taste.
  10. Enjoy!

    • They are so good too!! And bite sized, so if you wanted to go the cheddar and bacon route, it won’t hurt if you eat a couple πŸ™‚
