spinach crepes…




We love breakfast for dinner in our house…which is kinda weird because I actually don’t like breakfast for breakfast. I find it pretty heavy and prefer to keep it light in the AM. But I digress. Lately our breakfast for dinner meal has been in the form of some egg dish (mostly frittata – like here and here), but we are always open to new recipes. A couple weeks ago, I saw a video for spinach crepes and told M it was a recipe I wanted to try (I knew it would be right up his alley). After getting over the intimidation factor, we finally got around to it and now I am kicking myself for not making it sooner! Somehow this recipe came together so easily and turned out amazing. I basically inhaled my portion. While the crepes have a slight spinach taste, the maple syrup balances it out perfectly and the result is an addicting savory + sweet combination. Also, can we talk about adding the spinach? You guys know I love healthy eating. I’m also human and sometimes just feel like something delicious no matter how it’s made or where it comes from. Adding your greens wherever you can is a great way to have your metaphorical cake and eat it too! We served them up with a quick homemade hash brown which will probably have to be the next post because yum! 

Spinach Crepes
  1. 2 tablespoons melted butter plus more for coating the pan
  2. 1 cup all-purpose flour (I used gluten-free and you couldn't even tell a difference)
  3. 1 teaspoon honey
  4. 1 1/4 cup almond milk
  5. 2 eggs
  6. 1 teaspoon vanilla extract
  7. A pinch of salt
  8. 1 large handful of fresh spinach
  9. Garnish with 100% grade A maple syrup
  1. Mix all the ingredients (except the syrup) in a high speed blender.
  2. Heat a non-stick pan to medium low and coat with a thin layer of butter. You will need to coat before each crepe you make.
  3. Pour about 1/4 cup of the batter onto the pan and immediately start rotating the pan to thin out the batter into a crepe.
  4. Cook on one side for 1-2 minutes. Flip and cook on the other side for another 1-2 minutes.
  5. Set aside on a plate and repeat the process until all the batter is gone.
  6. Serve warm with maple syrup.
  7. Enjoy!

  • Yum yum yum, I am a BIG breakfast for anytime of day kind of girl. My favorite meal is 1 egg, 100 mL egg whites all cooked in coconut oil, mushrooms, asparagus and spinach all scrambled THEN I add in guacamole and fresh pico de gallo! Its like orgasmic and the perfect macro combo of proteins and fats and carbs ๐Ÿ™‚ You HAVE to try it! Sending love xo C

    • Gotta get your greens in!! I’m still thinking of ways to stuff them, but the spinach taste is so mild you could really get away with your favorites – chocolate, fruit, cheese….xo
